Taco Tuesday just got a whole lot healtier!
Next time you have a craving for tacos, why don’t you try a healthier alternative? This Quinoa Taco Salad really hits the spot AND it’s much better for you then traditional tacos!

Taco Tuesday isn’t really a thing in our house but we do love to have tacos once in awhile. (Who doesn’t, am I right?!) Instead of a traditional taco, we have been eating quinoa taco salad. It still has that delicious taco taste, but adding quinoa is so much healthier then eating your taco shells. With the fresh lettuce, you get a little bit of crunch too!
Quinoa is gluten-free, high in protein, high in fibre, and contains all 9 amino acids. Quinoa is considered a super food because of all it’s health benefits, and rightly so! It has a texture that’s a mix between oatmeal and brown rice and it doesn’t have a very strong flavour on it’s own. It’s an excellent way to add some bonus nutrition to any recipe.
- 1lb ground chicken, turkey, or beef.
- 1 package taco seasoning
- 1 tomato, diced
- ½ red onion, diced
- 1 cup shredded lettuce
- 3 cups quinoa
- ½ shredded cheese
- Prepare Quinoa according to package instructions.
- In a frying pan, fully cook your meat and add taco seasoning as per directions.
- Prepare veggies.
- When everything is finished cooking, mix all ingredients in a large mixing bowl.
- Spoon mixture into bowls, top with shredded cheese, and serve.
This recipe easily feeds 4~6 people. Serve this delicious quinoa taco salad with some caesar salad or a garlic bread and your family (and taste buds) will be thanking you! You don’t have to tell them how healthy it is either. 😉
