I’ve been playing around in the kitchen lately, trying to make more healthy meals. But more importantly, I’ve been trying to make healthier treats and snacks!! I feel like snacking is where I have the hardest time sticking to a healthy diet.
I’ve recently fallen in love with avocados. (I know, I’m late to the party!) So I have been trying to find new ways to eat them and this recipe is definitely a winner! They are so easy to whip together and freeze well too. Heating them in the microwave and adding a bit of nut butter is a delicious way to eat ’em too!
I can’t even feel guilty about eating these delicious Chocolate Avocado Muffins because they are so yummy with not a lot of unhealthy ingredients!
- 1 cup flour
- 5 tbsp Honey
- 1⅛ tsp Baking Soda
- ¼ tsp salt
- 6 tbsp chocolate chips
- ½ avocado
- ⅓ cup vanilla yogurt
- ¼ cup almond milk
- 2 tbsp coconut oil
- Preheat oven to 300 degrees.
- Mix all dry ingredients together in a large bowl.
- In a separate bowl, mash avocado, and then whisk in the yogurt, milk, and coconut oil.
- Add wet ingredients to dry ingredients and mix thoroughly, add in chocolate chips.
- Bake for 30~35 minutes, or until you can poke a toothpick into a muffin and have it come out clean.
I have been moving to a vegetarian diet lately. I am still working on it but once I am ‘there’ I would like to transition to a Vegan diet. I know that Honey is not technically Vegan but I still plan on using it. I have lived around bees all my life (my mom was a beekeeper!) and I just can’t see it being a problem for me. Especially since apiarists are doing such a good job in helping bees grow their numbers. Maybe I just know ethical apiarists?
I love using these paper muffin liners. I have then in this rainbow print and a polka dot print. They are so easy to use and there is no clean up! I just pour my batter in the cup, sit it on a cookie sheet and pop ’em in the oven. SO easy! You can also get loaf pans!
Anyways – back to these muffins! This recipe makes 8~10 decent sized muffins that are perfect for snacks or even as a breakfast item! They are so good I’ve convinced my whole family to love them. 😉
