I am a huge fan of cucumber salad. I thought I would up the nutritional benefits of one of my favorites salads and make this Cucumber and Quinoa Salad. I am happy to report that it is delicious! It tastes like a traditional cucumber salad with a little bit of a nutty/crunchy feel!
Last week I posted a Quinoa Taco Salad recipe. My family liked it so much I wanted to find more ways to incorporate the super food that is quinoa into our weekly meal plan. Like I mentioned before, Quinoa has so many nutritional benefits and it has such a mild taste, because of this, it makes a great addition to almost any meal. You could easily add it to most soups and salads with delicious results!
- 1 cucumber, thinly sliced
- 2 cups quinoa
- ¼ red onion, thinly sliced
- ¼ cup dill pickle juice
- ¼ cup sour cream
- salt and pepper to taste
- Prepare quinoa according to package instructions.
- In a large mixing bowl, combine all ingredients.
This recipe easily serves 4~6 people. It would be perfect for holiday potlucks!
It’s definitly a crowd pleaser.
