Easy Broccoli Salad. I love those three words.
Ever since my first broccoli salad, I’ve been hooked.
When I stopped eating meat I stopped eating broccoli salad because, obviously, something was missing. I didn’t want to just throw in vegetarian bacon though, so I decided to change the way I thought about my beloved broccoli salad.
Easy Broccoli Salad (with Cucumber!)
2018 has been the year of the Vegetable for me. I’ve been working a lot on eating more veggies, and our once strained relationship has become much more positive! I’m trying to be a lot less picky and I’m trying a lot more veggies. I discovered that I actually like a lot of the veggies I used to avoid, case in point; cucumbers!

- 95% Water
Enjoy them in a salad, with a little dressing or hummus, or just on their own!
But for now, let’s check out this easy broccoli salad that just so happens to feature cucumbers!
- ½ a cucumber, diced
- Small head of broccoli
- ½ cup cheese
- 2.5 tbsp Sugar
- 1 tbsp Lemon Juice
- 1 tbsp Vinegar
- ⅓ cup Mayo
- Cut broccoli, leaving as little stalk as possible, into small, bite sized pieces.
- Dice cucumber into small pieces. (I cut them to about 1cm)
- Using a small dish with a cover, combine sugar, lemon juice, vinegar, and mayo, and shake well.
- In a large bowl or dish, add in the broccoli, cucumber, cheese, and then pour the sauce in. Mix well.
Change it up a Bit.
I know broccoli salad usually has colorful (and flavorful) red onions, but I do not like onions. I said I was trying new veggies and really trying to eat more, but onions are something I just can’t bring myself to eat, no matter how many times I try them.
My point is; if you want to add onions in your salad, go for it! I think a bit of celery or would give this salad a nice crunch too. Or add some red peppers for pretty pop of color!
I kept the ‘idea’ of the broccoli salad by keeping relatively the same base of the salad; the sauce, cheese, and of course broccoli. By adding more veggies and taking out the bacon it’s much healthier and vegetarian friendly!
Keeping it Simple
I’m really not much of a cook. You guys know I’m pretty honest about that! That’s why super easy recipes like this easy broccoli salad are a staple in my meals. I try to make it as easy as possible to eat healthy, and if I can find quick recipes that I can work into my meal prep I am always excited to try it. Easy meals and snacks are what keep me going!
