Pumpkin Pie Granola Bars

I love making my own granola bars because I know they are SO much better than what you can buy in stores. I control what goes into my food and that means no processed junk or chemicals! I know, it’s SO much easier to buy a box of granola bars in the store, but these bad boys only took a few minutes to make and they are SO GOOD.

Pumpkin Pie Granola Bars
  • ¼ cup honey
  • 1 cup pureed pumpkin
  • ⅓ cup slivered almonds
  • ¼ cup brown sugar
  • 1 teaspoon cinnamon
  • ¼ teaspoon salt
  • ¼ teaspoon vanilla
  • ¼ teaspoon ginger
  • 2 cups quick oats
  1. Preheat oven to 300 degrees.
  2. Combine all ingredients in a large bowl and stir completely!
  3. Pressed into a lightly greased 8x11 pan, or a small cookie sheet.
  4. Bake for 20 minutes.

If you have the time, I highly suggest buying a pumpkin and making the puree yourself. All you do is scoop out the insides, (and cook the seeds!! YUM!) peel and cut up the pumpkin, boil it until soft, and puree it in a food processor or blender. It takes time but it is SO worth it. It is less expensive and you will end up with A LOT of pumpkin you can freeze for later!

I was pretty impressed with how quickly these bars went. Zac had some friends over before Taekwondo and they gobbled them up! Next time I will double the batch!
