We love this salad dressing recipe! My mom wanted a healthier alternative to store bought salad dressings so I whipped up this super easy Avocado Cucumber Dill salad dressing recipe. It is low in calories and has lots of taste. If you are a fan of Avocado you will LOVE this salad dressing recipe!
Avocado Cucumber Dill Salad Dressing Recipe
For this recipe you will need:
- 1 Dill Pickle
- 2 Medium Avocados, peeled and cored
- 1/2 Lemon
- 1 cup cucumber slices
- 1/4 cup water
- 1 tsp Tumeric
- 1 tbsp Cayenne Pepper
- 1 tbsp Olive Oil
- 1 tbsp Cumin
- Cut and peel your avocados and add them to the blender. Take your 1/2 lemon and squeeze the juice out, into the blender. Add your water and blend until smooth.
- Add the Cucumber slices. Depending on how strong your blender is, you may want to add a few at a time, blending between. I was able to add the slices all at once but found it would have made it easier if I had separated them a bit. After your cucumber is all blended add the pickle. Before adding the pickle to the blender, you are going to want to cut it up into pieces, and then blend.
- When your solid ingredients are blended, add your spices and blend everything together.
This salad dressing recipe yields 1 and a half cups of salad dressing. This Avocado Cucumber Dill Salad Dressing has only 31 calories per tablespoon. The avocado makes it thick and creamy, plus avocados are packed with nutritional value!
Store bought salad dressings are often full of salt and sugar, making them an unhealthy choice, but that doesn’t mean you have to leave out salad dressings all together. Read the labels and look for options with low sugar (under 3g per serving). If you can’t find anything healthy enough for you… Make your own! There are so many recipes and varieties out there. You never have to have a boring salad!
